If you are trying to add more seafood to your diet, but aren't a huge fan of fish...this meal might be for you. One of our favorite thing to do is to make our own seasoning blends/rubs and salad dressing as you know exactly what is going in it. Tonight we decided to make blackened salmon over lemon pepper asparagus along with a side salad to get our leafy greens in. We usually don't brag about our meals, but this turned out amazing!

Blackened Salmon with Lemon Pepper Asparagus
Ingredients:
2 salmon fillets
Cajun seasoning blend (recipe below)
1 bunch asparagus, ends removed
1 clove garlic, minced
2 tsp olive oil
2 lemons
Cajun Seasoning:
2 tbsp smoked paprika
1 tbsp garlic powder
2 tsp white pepper
1 1/2 tsp black pepper
1 tsp cayenne pepper
2 tsp dried thyme
1 tsp dried oregano
1. Blend Cajun seasonings in small bowl
2. Heat 1 tsp each in each pan
3. Dredge salmon through seasoning, coating well. Add to pan with oil and cook
4. Add minced garlic to pan, saute and then add asparagus. Grind lemon pepper seasoning to taste. Cook for 10 minutes.
5. Heat salmon on each side about 5 minutes each
6. Cut lemons and add the juice to the asparagus. By this time, everything should be done and ready to enjoy.
White Balsamic Vinaigrette
1/2 cup olive oil1/4 cup white balsamic vinegar
1/2 tsp dried oregano
1/2 tsp died thyme
1/2 tsp dried basil
fresh ground pepper to taste
Add all ingredients to shaker or small bowl and mix thoroughly.
