Mexican Omelets

It's officially fall and that means pumpkin everything! We decided to make our own pumpkin butter to spread on our toast with our Mexican omelets for breakfast.


Homemade Pumpkin Butter

1/4 cup pumpkin puree
vanilla extract to taste
ground ginger to taste
ground cinnamon to taste
ground nutmeg to taste
ground allspice to taste
(or use pumpkin pie seasoning)

Mix in small bowl and enjoy on toast

Making fresh squeezed orange juice
Yummy, we each get 8 oz
Sauteing onions, peppers, jalapenos and tomatoes. Seasoned with Ms. Dash Southwest Chipotle
Cook the egg in a small pan, flip and then add cheese and the southwest veggies. Fold over to cook a few more minutes

Breakfast with turkey bacon, Mexican omelet with avocado, Grainiac toast with homemade pumpkin butter
