A great alternative to pasta is spaghetti squash, it's very versatile and goes with any pasta dish as a replacement. To cook it, cut it in half, scoop out the innards and place in a baking dish with about 1/2" of water at 400 degrees until you can stab it with a knife (20-30 mins depending on the size). Once cooked, let sit for 10 mins to cool, then scoop into a bowl.
In the oven it goes
Cooking the turkey, onions and tomatoes
Added the kale to cook down
Added red pepper flakes and Italian seasoning
Add the cooked squash
Topped with some tasty shaved Parmesan. As a treat we had a glass of wine for being good this week.
