One of favorite fall meals is stroganoff over pasta. While this meal is absolutely delicious, it's not the greatest meal for when you are on a diet, with all the unhealthy ingredients. So to make it healthy, we eliminated the red meat and cut out the unhealthy pasta/rice that it usually goes over. We have found this fantastic brand Explore Asian who makes a variety of bean pasta. Compared to normal pasta, this one 11 grams of dietary and less carbohydrates compared to normal pasta, which has 40+ carbs and 2 or less grams of dietary fiber. Another awesome thing since we cut out the meat, is that the pasta actual has 24 grams of protein! We bought this huge box at Costco, what a deal.

All the ingredients
Saute the onion and garlic in a tbsp of olive oil
Then add the mushrooms and cook for 5-10 minutes until soft
Add the smoked paprika, black pepper and the final touch plain Greek yogurt (great substitute for sour cream)
Yummy dinner with a nice side salad
Mushroom Stroganoff
Ingredients:
1 tbsp olive oil
1 medium onion, diced
4 cloves garlic, minced
1 pkg sliced mushrooms (you can dice them if you want)
2/3 cup low sodium chicken broth
2 tsp smoked paprika
ground black pepper to taste
1/2 cup plain Greek yogurt or low fat sour cream
2 tsp of parsley flakes
pasta or rice of choice
Heat oil in pan, add onions and garlic and saute about two minutes. Then add the mushrooms and cook until soft, 5-10 minutes. Add the broth, smoked paprika and black pepper. Turn off heat and stir in Greek yogurt.
Top over your pasta/rice of choice and enjoy!
