Mexican Power Salad

We haven't tried quinoa until recently because we weren't too sure of the taste. But we have found that it's pretty tasty and high in fiber. Just a 1/4 cup is filling. Today we decided to take it and make an awesome vegetarian power Mexican salad with lime vinaigrette. 

All of our ingredients
Rinsing canned vegetables removes a lot of the added sodium
Juicing our limes
Adding red wine vinegar
Adding olive oil
A bit of honey
Spices
All mixed up
Avocado, tomatoes, onions, jalapeno and cilantro mix along side the black beans and corn
Tasty salad

Mexican Power Salad

Salad
1 1/2 cups cooked quinoa
1 can black beans, rinsed
1 can no sald added corn, rinsed
handful of cherry tomatoes, cut in fourths
1 jalapeno, diced
1 half small onion, diced
1 avocado, diced
shredded lettuce
shredded cheese

Dressing
1/3 cup fresh lime juice
2 tbsp red wine vinegar
2 tbsp olive oil
1 tbsp honey
1 tsp no salt add chili powder
2 tsp cumin

Instructions
Cook quinoa according to instructions, add flavoring if desired. We added a bit of lime juice, chili powder and lime juice. Cut up vegetables and add together in bowl. Make dressing while the quinoa is cooking, make the dressing, you can use a shaker or place in bowl and whisk it together, set aside. 

Once cooked, assemble salad. 1/2 cup of quinoa and 1/4 of the vegetable mixture among 4 servings. Top with shredded cheese and dressing.
